I recently started paying more attention to making sure I consume enough protein to meet my body’s needs. Different sources cite anywhere from 0.8-3.0g/kg of body weight, or 30 g per meal, or 35% of your calories to be coming from protein. For most of us this means above 100g of protein per day.
So how do you put that in? You can only have so much protein powder or egg whites…
So today I wanted to share a fairly simple recipe with just a few ingredients.
Ingredients
150 g mozzarella
1 large eggplant
500 g lean ground beef
0.355-0.5L Marinara sauce/medium salsa/adjika or other sauce
1 tbsp Olive oil
Salt and pepper to taste
Fresh herbs of choice (optional)
Cut eggplants in thick circles, salt a bit and put aside for 5-15 mins. It will secrete some juice.
Roast in the oven for about 15 -20 mins on a slightly greased baking sheet with olive oil at 375F. You can turn them halfway.
While the eggplant is roasting, grate the cheese and set aside.
Cook the ground beef in a pan with some salt and pepper.
In a baking pan, grease with a little olive oil, layer eggplants, then add a layer of the sauce (usually about 150 cc or more). I really like using up leftover salsa for it.
Then layer the ground beef. Cover with another layer of eggplants, then a layer of sauce again. Finish it with mozzarella and put into the oven for about 20 mins at 375F.
Garnish with your favorite fresh herbs when ready.
I usually cut this into 9 pieces and often serve with boiled or mashed potatoes and a fresh side salad.
